A friend shared a recipe with me last year for Jambalaya, and since I prefer to keep things as simple as possible...I choose to make this in the crock pot!
It's quickly become a family favorite and it's so easy to make! This makes quite a bit, but if we have more than just our family to prepare for, I double the recipe.
Ingredients
16 ounce package of cooked, frozen shrimp (tail off) and/or 2 cups cooked, shredded chicken
1 pound link sausage, sliced
1 bell pepper, diced
1 onion, diced
1 cup celery, chopped
4 cups beef broth
2.5 cups instant brown rice
1 can rotel tomatoes
1 can sliced mushrooms
2 bay leaves
1 stick of butter
1/4 teaspoon red pepper
Place all ingredients in crock pot and mix well. Cook on low for 6 hours or high for 3 hours.
Be sure to stir a few times throughout the cooking process!
